WHere is a simplified version of a cocktail found on our latest drinks list. Designed as a batch pre-mixed that's packed with the essence of the festive period, which makes it ideal for a festive gathering. Reserve the remaining syrup you can use for brunch beverages, desserts, or to make more rounds of bikinis.
The Bikini Cocktail
Makes enough for 10 servings
To make the Citrus Syrup (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Premix (produces 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Combine every items inside a pan, bring to a light boil, stirring so the sugar melts. Then, turn off the stove and let it to cool entirely. Transfer into an sealable bottle, cap it and store in the fridge, where it will keep for up to four weeks.
To make Cocktail Base: Pour all the liquid ingredients into one sizeable container, allow it to infuse for 60 minutes, then filter it , ideally through cheesecloth, making it perfectly clear.
When ready to serve: Add 85ml from the premix into a mixing glass containing ice, and stir gently for a minute to chill. Strain to a frosted cocktail glass or similar, top with some cranberries adding the final touch using a brief mist of the essential oil over the top.
